Location
The Bourgogne Aligoté is a traditional regional appellation. It was granted its own AOC in 1937.
It is produced throughout the Burgundy region (Côte d'or, Yonne, Saône et Loire).
Our Bourgogne Aligoté is grown in the area of Puligny-Montrachet.
Character of the wine
The Bourgogne Aligoté is a still dry white wine with a pale golden colour and a well-balanced taste.
It ranges from a fruity bouquet to a more floral palette. This vibrant wine offers a nice freshness and is easy to drink..
Serving suggestions
The Bourgogne Aligoté is a perfect match for grilled fish. Its livelyness and citrus notes stand up well to the saltyness of oysters.
In summer it pleasantly accompanies raw vegetables, salads and grilled meats. It is a light and fruity wine and can equally be enjoyed without food.
As an appetizer, it can be mixed with „Cassis de Dijon” and it turns into the famous „Kir”, named after its inventor
Chamoine Kir, former deputy major of Dijon.
The Bourgogne Aligoté should be tasted chilled, at a temperature of 10° or 11°C.
Location
The Chardonnay is a native grape of the Burgundy area, formerly named „Pinot Blanc”. It perfectly matches the terroir
of the Burgundy: poor soil or calcareous marl, perfect exposure but a temperate climate. It is used for the production of white
Burgundy wine.
Character of the wine
The Bourgogne Chardonnay is a still, dry, white wine with fruit aromas (lychee, pear). As a result of the perfect location, the
sugar content can reach a high level whilst maintaining a balance of fruit and acidity. It is rapidly available for a tasting.
Produced in the commune of Puligny-Montrachet, our Chardonnay is a very fine representative of the grape, noble and straight.
Serving suggestions
The Bourgogne Chardonnay accompanies appetizers, meat (sausages, ham marbling), fish in butter, shellfish and cheese
(Brie, Comté, Gruyère).
It should be served at a temperature of 11 to 13°C.
Location
Lying between Puligny-Montrachet and Chassagne, Saint-Aubin is a wine-growing village in the southern part of the Côte de Beaune. The vineyards are positioned on rather steep slopes, facing East or Southeast, at a height of 300-350m.
The white grapes grow on white clay with a high limestone content.
Character of the wine
The Saint-Aubin 1er Cru « Les Frionnes » is a still, dry white wine, that belongs to the great family of Burgundy white wines.
Its colour is pale gold with greenish highlights. The bouquet combines green almond, beeswax and honey, evolving towards cinnamon with maturity.
The flavors are dominated by softness, finesse and elegance.
Serving suggestion
With the Saint-Aubin 1er Cru « Les Frionnes », firm-textured fish, pastries, foie gras, white meat and some pretty strong cheese would be at ease.
It should be served at 12-14°C..

The appellation Puligny-Montrachet (created in 1937) includes 114 ha of appellation „village”,

Puligny-Montrachet, along with Chassagne, is the most perfect expression of the Chardonnay grape.
The vines mostly occupy brown limestone soils, or soils, where limestone alternates with marls and limey-clays.

Our Puligny-Montrachet village is a dry, still white wine. It is of a bright gold colour with greenish highlights,
becoming more intense with time.
This racy wine expresses a hint of honey and its aromas develop with maturity.
In the mouth, it is fine and elegant, slightly mineral with a good aromatic persistence.
Body and bouquet blend into a subtle harmony. It combines grace with a well-defined character and a remarkable concentration.
Serving suggestion
Young, it is possible to serve the Puligny_Montrachet in a carafe, uncorked one hour before serving.
It harmonizes with chicken liver cakes, pies.
The older vintages should be served in its bottle and should only be uncorked just before serving, as the interesting,
but very volatile fragrances disperse at the slightest contact with air.
It accompanies chicken in sauce, veal fried with mushrooms, lobster, smoked salmon.
The Puligny-Montrachet should be served chilled, but not too cold: 11-13°C.

Les Perrières is an ancient name which means „perres” (=stones). Many places in the Côte d'or area have kept this
appellation. This might refer to a quarry, where the quarryman, called „perrièr” used to extract stones.
The ground on which the grapes grow, is stony, chalky and clayey.

It is refined with flower aromas and a hint of honey. On your pallate, it is ample and structured with a sincere rusticity.

Young, it harmonizes with Dieppe sole filets, freshwater fish stew.

character and a remarkable concentration. It can be stocked about 6-8 year and up to 15 years for strong vintages.

Origin of the wine stock: This locality finds its origin in the middle Age when the Lord of Puligny-Montrachet
gave this parcel to his illegitimate son.
The Batard-Montrachet is made of the Chardonnay Grape.
Character of the wine
LThe Batard-Montrachet is a dry, still white wine, traditionally aged in oak barrels. The grapes grow on brown, stony and chalky soil.
The Wine is closed when it is young and it develops only slowly. It remains closed a long time before opening up all of its taste.
The nose is marked by notes of hazelnuts and almonds. It is a powerful wine to stock, very thick with length and a great aromatic persistence.
With its slow evolution, it can easily age over 10 or 15 years.
Serving suggestions
The Batard-Montrachet harmonises perfectly with foie gras, cooked fish in a cream sauce (turbot in cream sauce), pan-fried sea scallops,
saffroned monkfish and lobster.
The Batard-Montrachet should be served chilled but not too cold at a temperature of 11-14° C.

This appellation Coteaux Bourguignons was created in 2011 and is mainly produced in three departments of the Burgundy:
Yonne, Côte d'or and Saone et Loire.
This wine is grown on an infinite variety of soils, from chalky soils to granites, as well as limestonerich and marly soils..
Charakter of the wine
The Coteaux Bourguignons is a dry red wine made from the Pinot Noir grape.
Slightly tannic, it offers a good and round taste with fruit aromas. It has an intense ruby colour.
Serving suggestion
Kebab, poached eggs and simple cheese.
Young, it should be served at 14° C, and at 16° C when it is more mature.

The Bourgogne Pinot Noir blends in well with grilled red meat,roast, light venison, carp.

Vineyards of the Côte de Beaune.
The vineyards of Auxey-Duresses (pronounced Aussey) are at the passage of the red wine production (Volnay and Monthelie in
the North) and the white wine production (Meursault in the South). These vineyards (170 ha in total, including 34 ha of
white) are oriented South and South-East at an altitude of 260-360m.
Character of the wine
Our Auxey-Duresses is a mellow, dry red wine, made from the Pinot Noir grape.
The tannins give it a solid structure.
Its colour is bright ruby, neither too light, nor too dark. The bouquet is well-balanced between juicy aromas of small black
fruits (blackcurrant, blackberry...) and flower scents (peony).
In the mouth it is fine, supple and pleasing.
Serving suggestion
The Auxey-Duresses accompanies roasted chicken, turkey, lamb and veal.
It should be served at a temperature of 15 or 16° C.
Location
Village appellation of the Côte de Beaune, Côte-d'Or.
This appellation includes 15 climates classified as Premier Cru. The producing commune is Monthelie.
The name Monthelie and Monthelie 1er Cru may be followed by the name of their climat of origin.
Character of the wine
The Monthelie is a dry red wine with a beautiful ruby colour. Its aromas express small red and black fruit (cherry, blackcurrant), some floral notes (Violet, peony). With age, these aromas shift towards underbrush, bracken and spices. Its firm and velvety texture overlies delicate tannins.
The Monthelie, as well as the Volnay, is thought of as a feminine wine.
Serving suggestion
Velvety and quite firm, its tannins should be accompanied by mouth-filling meat (dark or white meat), roast lamb, rabbit.
Roast offal, liver or grilled sausages will agree with the firmness of the wine, as well as Brie or Reblochon cheese.
Serving temperature : 15°C
Location
The vineyards of Santenay are positioned in the South of the Côte de Beaune and stretch over 378 hectar. 98% of the production is red wine.
The vines grow on strong limestone, reinforced by Marl. The deep soil requires a special cut in order to concentrate the crop.
The slopes of Santenay face South or East.
Character of the wine
The Santenay ages slowly. The wine is tannic and well-structured. Young, it offers floral aromas (Violet). With maturity, scents of chestnuts and plums appear.
Serving suggestion
The Santenay accompanies sophisticated dishes (marinated, roasted red meat).
It is a hunters' wine and agrees well with pheasant, rabbit and hare. It mixes well with middle-strength cheese.
The Santenay should be served at 15°C and can easily be stored for some years.
A servir pas trop chambré autour de 15° C.
